Brownies Made Healthier

We challenged ourselves to come up with a nutritious and delicious brownie. Each square has nearly 3 grams of fiber (thanks to whole wheat flour) and just 2 grams of saturated fat (thanks to olive oil). The magic ingredient? Squash, to make it moist and rich.

Directions

1. In a large bowl whisk together 1 large egg, 1 large egg white, 1 1/4 cups dark brown sugar, 3/4 cup frozen cooked winter squash, thawed, 3 tablespoons olive oil, and 1 teaspoon vanilla extract. Add 3/4 cup unsweetened cocoa powder, 1/3 cup whole wheat flour, 1/4 teaspoon salt, and 1/2 cup semisweet chocolate chips; mix until well combined.

2. Pour batter into an 8-inch square pan coated with cooking spray. Bake at 350 degrees F. until brownies spring back to the touch, 23 to 25 minutes.

3. Cool, then dust with confectioners' sugar before serving.
