Americans have had a growing love affair with Mexican food for years, and the holiday of Cinco de Mayo (literally, the fifth of May) is a perfect excuse to round up your friends for a spring fiesta. Set the mood with red, green, orange, and pink tablecloths, paper banners, and merry mariachi music. Try a do-it-yourself quesadilla bar, which will free you up to enjoy the party. On a long table or counter, place flavored tortillas (wrapped in a dish towel to keep them warm) alongside bowls of store-bought ingredients, such as precooked chicken and shredded cheese, and a couple of homemade toppings. Guests can sandwich their favorite filling between two tortillas and heat them on a quesadilla maker until the cheese melts. Then comes the fun part -- whacking and cracking the pinata, which you can hang with fishing twine in a wide doorway or outside from a tree branch. Each person is blindfolded and takes a turn swinging a broomstick at the papier-mache creation filled with toys and candy for the kids and gift certificates -- say for movie tickets or DVD rentals -- for the adults. Your guests are sure to leave in high spirits.
