Makes 12 muffins
Hold the salt! These apple-cinnamon muffins taste so rich you won't need it. For a treat, top with streusel before baking. Combine 1/4 cup flour, 3 tbsp light brown sugar, 1/4 tsp cinnamon, 2 tbsp chopped walnuts, and 2 tbsp unsalted butter to form crumbs.
Ingredients
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/2 cup chopped walnuts
3/4 cup light brown sugar
1/2 cup unsalted butter, softened
2 eggs
3/4 cup fat-free milk
1/2 tsp vanilla extract
1/2 cup unsweetened applesauce
Directions
1. Line muffin pan with baking cups; coat cups with nonstick cooking spray. Combine flour, baking powder, cinnamon, and walnuts. In another bowl beat together brown sugar and butter; add eggs, milk, vanilla, and applesauce. Stir in flour mixture until just combined.
2. Fill cups; top with streusel if desired. Bake at 400 degrees F. until tops spring back when touched, 18 to 20 minutes. Cool in pan 5 minutes, then move to wire rack.
