Ingrid Hoffmann, host of Delicioso on Univision and Simply Delicioso on the Cooking Channel, is a whole-grain tortilla devotee. Wraps and burritos are obvious options—fill one up with eggs, grilled chicken, beans, avocado, tomato wedges, spinach, jalapenos, or whatever other perishable foods you happen to have in the fridge. Or whip up cheese quesadillas, thin crust "pizzas," even Mexican lasagna.
Hoffmann likes to use tortillas in desserts too: Crisp them in a skillet with a pat of butter, cinnamon, and sugar, or melt semidark chocolate with a little butter, warm up the tortilla on the griddle, fill, and fold it up like a quesadilla. Delicioso!
