Roquefort-Walnut Dip

Ingredients
  • 4 cups plain fat-free or low-fat yogurt
  • 1 cup chopped walnuts
  • 2/3 cup crumbled Roquefort cheese
  • Assorted fresh vegetables

Directions

1. Place the yogurt in a colander lined with layers of cheesecloth or a clean kitchen towel, then set colander over a large bowl. Cover and refrigerate 3 hours for nonfat yogurt or 5 hours for low-fat yogurt.

2. Transfer strained yogurt cheese into a medium bowl and discard liquid. Stir together the yogurt cheese, the nuts, and the Roquefort. Serve with assorted fresh vegetables. Makes 42 servings (2-2/3 cups).
