Buffalo Chicken Salad

  • 6 tablespoons  mayonnaise
  • 1 1/2 tablespoons  store-bought wing sauce, such as Frank's Red Hot
  • 4 1/2 cups  shredded rotisserie chicken
  • 1/2 cup  thinly sliced celery
  • 1/2 cup  thinly sliced carrots
  • 2 scallions, white and green parts, thinly sliced
  • Kosher salt and ground black pepper
  • Sliced whole-grain bread
  • Crumbled blue cheese


1. Whisk together the mayonnaise and wing sauce. Add chicken, celery, carrots, and scallions and toss to combine. Season with salt and pepper.

2. Make sandwiches on bread, topping with blue cheese. Pack and keep chilled. You can also pack the chicken salad and assemble the sandwiches at the picnic.
