Broiled Hot Wings with Celery Fennel Apple Slaw

Ingredients
  • 1 8 ounce container plain low-fat yogurt
  • 1/2 cup crumbled blue cheese (2-1/4 oz.)
  • 2 1/2 tablespoons cider vinegar
  • 2 tablespoons plus 1/2 teaspoon Tabasco sauce
  • 1 tablespoon sugar
  • 7 medium radishes, cut into thin matchsticks
  • 3 large celery ribs cut into 2-1/2-inch-long matchsticks
  • 1 small fennel bulb, halved, cored, and cut into thin slices
  • 1 large Granny Smith apple, halved, seeded, and cut into thin matchsticks
  • 4 pounds chicken wings, wing tips discarded
  • 3 tablespoons unsalted butter

Directions

1. Whisk yogurt, cheese, 1/2 tablespoon vinegar, 1/2 teaspoon Tabasco, and the sugar together in a large bowl; salt and pepper to taste. Add vegetables and apple, tossing to combine; chill, covered, 15 minutes.

2. Preheat broiler. Rinse and pat chicken dry. Arrange on lightly oiled rack in broiled pan in a single layer; season with salt and pepper. Broil chicken, turning, until golden brown on both sides, about 10 minutes.

3. Meanwhile, heat butter with remaining 2 tablespoons vinegar and Tabasco over moderate heat, stirring, until butter is melted, about 2 minutes.

4. Transfer chicken to a large serving bowl and toss with butter mixture until well coated. Serve with slaw. Makes 6 servings.
