Spicy Roasted Chicken

Ingredients
  • 1/4 cup dry breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon curry powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 chicken thighs

Directions

Heat oven to 400 degree F. In a medium bowl combine all dry ingredients, and coat both sides of chicken. Place chicken, skin side up, in a jelly-roll pan lined with foil. Bake 20 minutes, then turn chicken over and bake 20 minutes more. Makes 8 servings.
