Ingredients
  • 2 cups earl grey tea, chilled
  • 1/2 cup Simple Syrup
  • 6 tablespoons fresh lemon juice, plus curled strips of peel for ganish
  • 1/4 cup rum

Directions

In a pitcher, combine all ingredients except peel. Pour into glasses filled with ice. Garnish with peel, if desired. Makes 4 servings.

Simple Syrup

Yield: 2 cups
Roast:   25 mins  to  35 mins plus 30 minutes
 
Ingredients
  • 1 cup sugar
  • 1 cup water

Directions

In a small saucepan, combine sugar and water. Cook over medium-high heat, stirring, until sugar dissolves and mixture comes to a boil. Transfer to a heat-proof pitcher and refrigerate until well chilled, about 30 minutes. (Can be made ahead. Store in an airtight container in the refrigerator up to 2 months.) Makes 2 cups.
