  • 2 tablespoons part-skim ricotta cheese
  • 1 tablespoon apricot, peach or pineapple preserves

Directions

Toast raisin bread. Spread 1 slice with ricotta. Spread preserves on the other slice and place over ricotta. Makes 1 sandwich.
