Tequila-Cranberry Chutney on Brie

Ingredients

CHUTNEY
1 cup diced red onion - 2 cups fresh or frozen cranberries
- 3/4 cup diced Red Delicious apple
- 3/4 cup sugar
- 1/4 cup hot pepper jelly
- 2 tablespoons tequila
- 1 tablespoon orange-flavored liqueur
- 1 tablespoon grated orange peel

PECANS
1 tablespoon butter or margarine - 1 cup chopped pecans, toasted
- 1/4 teaspoon salt

BRIE
1 small wheel brie cheese (2 to 2-1/2 lbs.) - 2 French bread, sliced and toasted
- 2 teaspoons vegetable oil
Directions
1. Make Chutney: Heat oil in large saucepan over medium heat; add onion and cook 10 minutes. Stir in remaining chutney ingredients; bring to boil. Reduce heat and simmer, stirring, 20 to 25 minutes or until thick. Cool.
2. Make Pecans: Heat butter in skillet over medium heat. Add the pecans and salt and cook, stirring constantly, 1 minute.
3. For Brie: Microwave brie on a microwave-proof platter on 100 percent power (High) 45 seconds or just until warm. Top with chutney, then pecans. Serve with toasts. Makes 30 servings.
