Grilled Chicken Tacos


  • 2 small boneless, skinless chicken breasts
  • 1 teaspoon  ground cumin
  • 1 teaspoon  garlic powder
  • 1 teaspoon  chili powder
  • 1 teaspoon  kosher salt
  • Pepper Jack cheese, shredded
  • 6 corn tortillas
  • White onion, chopped
  • Cilantro, chopped
  • Squeeze of lime
  • Hot sauce


1. Combine cumin, garlic powder, chili powder, and salt. Rub chicken breasts with spice mixture. Grill chicken.

2. In a skillet or the oven melt some shredded Pepper Jack cheese on the tortillas. Top tortillas with the sliced grilled chicken; add chopped white onion, cilantro, a squeeze of lime, and hot sauce. SERVES 2-4
