Lamb and Olive Skewers with Yogurt Sauce

Ingredients

  • 1 pound  boneless leg of lamb
  • 1 teaspoon  lemon zest
  • 1/2 teaspoon  kosher salt
  • 1/4 teaspoon  ground black pepper
  • 1 clove minced garlic
  • 1 tablespoon  olive oil
  • 1/3 cup  plain Greek yogurt
  • 3 tablespoons  milk
  • 1 tablespoon  lemon juice
  • 1/4 cup  crumbled feta cheese
  • 1 tablespoon  chopped flat-leaf parsley
  • 3/4 cup  green olives

Directions

1. Thinly slice lamb into long, narrow strips and toss with lemon zest, salt, pepper, garlic and olive oil; cover and refrigerate 30 min. Combine yogurt, milk, lemon juice, crumbled feta cheese and parsley; cover and keep chilled.

2. Thread lamb strips and green olives onto skewers. Grill skewers over medium-high heat until just cooked through, about 7 min. serve with yogurt sauce.
