Barbecue Pork

Ingredients
  • Barbecue Sauce
    1 teaspoon vegetable oil
  • 1/4 cup minced onion
  • 1 cup ketchup
  • 1 cup water
  • 2 tablespoons cider vinegar
  • 2 tablespoons packed brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dry mustard
  • 1/2 teaspoon bottled hot pepper sauce
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground red pepper
  • 2 pork tenderloins (1-1/4 lbs.) or 12 thin-sliced, pork loin chops, trimmed
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground red pepper

Directions

1. Make Barbecue Sauce: Heat oil in medium saucepot over medium-high heat. Add onion and cook 3 minutes. Add remaining sauce ingredients; bring to boil. Reduce heat; cover and simmer 30 minutes, stirring occasionally.

2. Heat grill. Cut tenderloins into 1/2-inch-thick slices. Mix paprika, salt, the 1 teaspoon mustard, 1/2 teaspoon black pepper and 1/8 teaspoon red pepper in bowl and rub over meat.

3. Toss pork with 3/4 cup sauce. Grill 3 minutes per side or until instant-read thermometer inserted in center of pork slice registers 170 degrees F.* Serve with remaining sauce. Makes 4 servings.

Note
  • *  If using a digital instant-read thermometer, insert the tip of the thermometer into the food at least 1/4 of an inch for 10 seconds. If using a dial instant-read thermometer, insert the thermometer through the side of the meat to the center of the slice to get an accurate reading.
