Pasta with Mexican Beef Sauce

Ingredients
- 2 teaspoons vegetable oil
- 1 cup chopped onions
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon minced garlic
- 1 pound ground beef
- 1 teaspoon salt
- 6 cups chopped fresh plum tomatoes
- 1 pound dried wagon wheel pasta, cooked according to package directions
- 1 cup shredded pepper jack cheese
- 1 1/2 cups tortilla chips
- 1/4 cup sliced green onions
Directions
1. Heat oil in large skillet over medium-high heat. Add onions and cook until softened, 5 minutes. Stir in cumin, chili powder and garlic; cook 30 seconds. Add ground beef and salt; cook, stirring, until browned. Stir in tomatoes and cook until softened, 5 minutes. Toss sauce with hot pasta and cheese. Top each serving with 1/4 cup tortilla chips and 2 teaspoons green onions. Makes 6 servings.
