Ingredients
- 3 cups water
- 1 cup dried black-eyed peas
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped carrots
- 1/2 cup finely chopped celery
- 1 slice bacon, diced
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 cup long-grain rice
- 1/2 cup chicken broth
- 1 1/2 pounds mixed collard or mustard greens, kale, or spinach, chopped
- 1/2 teaspoon salt
- 1 ham steak (3/4 to 1 lb.), broiled
- Red-pepper sauce
Directions
1. Make Hoppin' John: Combine water, black-eyed peas, onions, carrots, celery, bacon, and red pepper flakes in a large saucepan. Bring to a boil, cover and simmer 30 minutes. Stir in salt and simmer, covered, 30 minutes more, until tender.
2. Meanwhile, cook rice according to package directions. Stir into black-eyed pea mixture.
3. Make Greens: Bring chicken broth to a boil in a large saucepan. Add mixed greens and salt; cook 15 minutes, stirring occasionally, until tender. (If using only spinach, reduce broth to 1/4 cup and cook spinach 5 minutes.) Serve with Hoppin John, ham and red-pepper sauce. Makes 4 servings.
