Ingredients
- 1/2 heavy or whipping cream
- 2/3 cup prepared lemon curd
- 2 teaspoons crystallized ginger, finely chopped
- Fresh mint sprigs, for garnish
Directions
Beat heavy cream in a large mixer bowl to stiff peaks. Fold in lemon curd with a rubber spatula just until combined. If desired, cover and refrigerate up to 2 hours. Divide mousse among 4 dessert bowls. Sprinkle the top of each serving with 1/2 teaspoon ginger. Garnish with mint sprigs, if desired. Makes 4 servings.
