Rich Chocolate Ice Cream

Yield: Makes about 1 quart.

Ingredients

  • 1/2 cup  sugar
  • 2 tablespoons  unsweetened cocoa
  • 1 1/2 cups  whole milk
  • 1 1/2 cups  heavy cream
  • 3 egg yolks
  • 8 ounces  good quality semisweet chocolate,chopped
  • 2 teaspoons  vanilla extract

Directions

1. In a saucepan mix sugar and cocoa. Add milk, cream, yolks and chocolate. Whisk over medium-high heat until chocolate is melted and mixture just starts to bubble. Add vanilla and strain through a fine sieve.

2. Stir mixture over an ice bath until cold or chill overnight. Churn in an ice-cream maker; keep frozen in an airtight container for up to a month.

Tip

  • This delicious ice cream is basically churned chocolate pudding. Its the perfect balance of chocolate, cocoa and cream.
