Rich Chocolate Ice Cream
Yield: Makes about 1 quart.
Ingredients
- 1/2 cup sugar
- 2 tablespoons unsweetened cocoa
- 1 1/2 cups whole milk
- 1 1/2 cups heavy cream
- 3 egg yolks
- 8 ounces good quality semisweet chocolate,chopped
- 2 teaspoons vanilla extract
Directions
1. In a saucepan mix sugar and cocoa. Add milk, cream, yolks and chocolate. Whisk over medium-high heat until chocolate is melted and mixture just starts to bubble. Add vanilla and strain through a fine sieve.
2. Stir mixture over an ice bath until cold or chill overnight. Churn in an ice-cream maker; keep frozen in an airtight container for up to a month.
Tip
- This delicious ice cream is basically churned chocolate pudding. Its the perfect balance of chocolate, cocoa and cream.
