Ingredients
- 2 1/2 cups tomato or vegetable juice
- 1 cup peeled, seeded and finely chopped fresh tomatoes
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped cucumber
- 1/2 cup finely chopped green bell pepper
- 1/2 cup finely chopped green onion
- 3 tablespoons white wine vinegar
- 2 tablespoons olive oil
- 1 large clove garlic, minced
- 2 teaspoons finely chopped fresh flat-leaf parsley
- 1 1/2 teaspoons salt
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon freshly ground pepper
Directions
Combine all ingredients in large glass bowl. Cover and refrigerate overnight. Serve cold. Makes 5 servings (5 cups).
