Black-Bean Pitas with Avocado Salsa
Ingredients
- 1 avocado, pitted and diced
- 1 1/2 cups diced plum tomatoes
- 1/2 cup chopped green onions
- 2 tablespoons fresh lime juice
- 2 tablespoons chopped fresh cilantro
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 teaspoon minced garlic
- 1/4 teaspoon cumin seed
- 1 can (16 or 19 oz.) black beans, rinsed and drained
- 1/4 teaspoon salt
- 1/4 cup mayonnaise
- 1/2 teaspoon minced chipotle in adobo
- 6 6 inches pita breads
- 1 cup coarsely chopped iceberg lettuce
Directions
Make Avocado Salsa::1. Combine olive oil, chopped onion, minced garlic, cumin seed, black beans, salt, mayonnaise, and minced chipotle in adobo, in medium bowl; set aside.
2. Heat oil in skillet over medium-high heat. Add onion; cook 2 minutes. Stir in garlic and cumin; cook, stirring, 30 seconds. Add beans and salt; cook, stirring, until heated through. Lightly mash; cover and set aside.
3. Combine mayonnaise and chipotle in cup. Cut each pita in half crosswise. Spread mayonnaise on one side of pita halves. Spread bean mixture over mayonnaise; top with salsa and lettuce. Makes 4 servings.
