Combine 1 tablespoon chili powder, 1 teaspoon instant espresso powder, 1 teaspoon kosher salt, 1/4 teaspoon cinnamon, and 1/8 teaspoon pepper.
Rub 1/2 tablespoon of mixture on each side of 2 12-ounce thick-cut New York strip or shell steaks; allow to sit at room temperature for 20 minutes. Grill over medium-high heat 5 to 6 minutes per side for medium; let rest 2 minutes, then slice. Serves 4.
