Thread 1 pint grape tomatoes on skewers and grill alongside Spice-Rubbed Steak until just charred; set aside.
Crumble 3/4 cup (3.5 ounces) Roquefort cheese. Mash 1/2 cup cheese with 1/4 cup heavy cream and a pinch of pepper and set aside the remaining cheese.
Grill 4 naan-style flatbreads or baked pizza crusts on one side until marked; spread grilled sides with cheese mixture. Top with some sliced steak and charred tomatoes, then return flatbread to grill to warm through. Sprinkle with remaining crumbled cheese and baby arugula. Serves 8.
