For lighter meat such as a chicken or fish, pick up a lighter-bodied wine, like a dry rose. A rose is light like a white but lingers like a good red. It won't overpower your meal's flavors but will instead complement and highlight the best in your dish. Osborn's favorite is Mulderbosch ($11).
