Once you taste these hearty muffins, you'll actually look forward to getting your daily fill of fiber.

Makes 12 muffins
Ingredients
2 cups wheat bran
1 cup all-purpose flour
3/4 cup whole wheat flour
1/4 cup sugar
1/3 cup chopped unsalted peanuts
1 1/4 tsp baking soda
1/4 tsp salt
1 egg
3/4 cup whole milk
2/3 cup honey
1/2 cup peanut butter
2 tbsp vegetable oil
Directions
1. Line muffin pan with baking cups. In a bowl combine bran, flour, whole wheat flour, sugar, peanuts, baking soda, and salt. In another bowl combine egg, milk, honey, peanut butter, and oil. Stir in flour mixture until just combined.
2. Fill cups; sprinkle with extra peanuts. Bake at 400 degrees F. until tops spring back when touched, 18 to 20 minutes. Cool in pan 5 minutes; serve warm.
