An easy, no-bake cookie made with marshmallows -- perfect for kids!
Makes 28 Cookies
Work: 25 minutes
Total: 90 minutes
Ingredients
14 large (not jumbo) marshmallows
28 vanilla wafer cookies
1 18-oz container white frosting
Nonpareils
Directions
1. Line a baking sheet with parchment and place a cooling rack on top. Cu each marshmallow in half crosswise and adhere cut sides to the tops of the cookies; place cookies on rack.
2. Microwave frosting for about 15 seconds to soften to a consistency just thicker than honey. Spoon frosting over cookies completely coating. Scrape up any excess frosting from parchment and remelt as needed to continue coating cookies. Sprinkle tops with nonpareils. Let set completely, about 1 hour.
