The sweet and spicy mustard lends a kick, and bread crumb topping adds texture to this rich meat. If you're out of fresh herbs, you can substitute 1 teaspoon dried rosemary for fresh.
We kept the skin on the butternut squash, since it's edible and delicious. If you prefer, remove the skin with a Y-shaped peeler and roast it as in the recipe below. Either way, this healthy side dish is an excellent complement to any main course.
