Gazpacho

Ingredients

  • 2 1/2 cups  tomato or vegetable juice
  • 1 cup  peeled, seeded and finely chopped fresh tomatoes
  • 1/2 cup  finely chopped celery
  • 1/2 cup  finely chopped cucumber
  • 1/2 cup  finely chopped green bell pepper
  • 1/2 cup  finely chopped green onion
  • 3 tablespoons  white wine vinegar
  • 2 tablespoons  olive oil
  • 1 large clove garlic, minced
  • 2 teaspoons  finely chopped fresh flat-leaf parsley
  • 1 1/2 teaspoons  salt
  • 1/2 teaspoon  Worcestershire sauce
  • 1/2 teaspoon  freshly ground pepper

Directions

1. Combine all ingredients in large glass bowl. Cover and refrigerate overnight. Serve cold. Makes 5 servings (5 cups).
