mixed pitted olives, rinsed and drained
large garlic clove, thinly sliced
sherry or red wine vinegar
fresh lemon juice
hot red pepper flakes
Toss all ingredients together in a bowl and chill, covered, for at least 2 days, stirring occasionally.
Bring olives to room temperature before serving.
