1 cup rolled oats 1/2 cup pecans, chopped 1/4 cup wheat germ 1/2 cup sunflower seeds 1 cup bran flakes 1/2 teaspoon vanilla extract 1 tablespoon fish, flaxseed or olive oil 1 tablespoon honey
(optional) 1/4 cup dried cranberries 1/4 cup dried blueberries 1/4 cup grated carrots
Place a large nonstick skillet over medium-low heat. When it is hot, add the oats and pecans and cook, stirring constantly. Until they just begin to turn golden, about 5 minutes. Add the wheat germ, sunflower seeds and bran flakes and continue cooking for another 10 minutes. Drizzle with the vanilla, oil and honey. Mix gently. Set aside to cool. Add the cranberries (cover and refrigerate up to one week). Add the blueberries and carrots, if using, just before serving.
